Varieties of Green Tea
There are different varieties of green tea, with the majority originating in China and Japan. However more and more are emerging from both India and Sri Lanka, where production has always specialized in black tea. Depending on the origin of the tea, the taste will vary due to the prevailing weather, soil and cultivation conditions, along with the processing methods, conditions of transporting and warehousing the product following picking.
Each variety has it's own distinct flavor, some with high levels of caffeine and some extremely low, and the levels of tannic acid differ as well. As a general rule, it is said that tea which is cultivated in the shade has a higher caffeine level and less tannic acid than those grown in the open sun. The stimulating effect produced from these varieties is also higher and are therefore not suitable for either the elderly or young children.
